Filling Farro Salad - my take on the Jennifer Aniston "Friends" salad!

The viral salad from TikTok with some *minor* changes to make it even more delicious!


In an interview in 2015, Jennifer Aniston revealed that she ate the same salad every day while working on the set of Friends. I saw it all over social media and, since I've been on a salad kick, I decided to try it...but basically changed up most of the recipe (a little on purpose, and a little on accident). I'll let you google the actual version if you want, but here is MY version!


I added chicken to mine for extra protein and to make it feel like more of a complete meal. And honestly, if you're not using rotisserie chickens as part of your meal prep, you need to hop on the bandwagon. It's a major time AND money-saver. A full rotisserie chicken in my grocery store is $5.99. A package of 2 chicken breasts usually runs around $10 depending on the weight. So I mean... kind of a no-brainer.


Filling Farro Salad


Ingredients

  • 1/2 Rotisserie chicken (either 2 breasts or 2 thighs + 2 drumsticks)

  • 1 package of 10-minute Farro (about 8 oz, I use the Trader Joe's brand)

  • 1 English cucumber, diced small

  • 1/2 bunch of cilantro (or as much as you want)

  • 1/2 red onion, diced small

  • Crumbled feta

  • 1/4 cup roughly chopped pistachios

Dressing

  • EVOO

  • White balsamic vinegar

  • Juice of 1/2 lemon

  • Salt and pepper

Directions

  1. Cook the farro according to package directions

  2. Chop your veggies and pistachios. (You can soak the red onion in a bowl of cold water for ~ 10 minutes to take away the harsh taste. This is optional!)

  3. Cut up your chicken into bite-size pieces

  4. Combine everything in a large bowl and mix it up

  5. Prep the dressing - no measurements but in general, I usually do 2:1 EVOO to vinegar, but you can adjust based on your tastes.

  6. Dress the salad and enjoy!


This will make about 4 servings, and keeps well in the fridge! I had it for lunch 3 days this past week and finished the rest as a side dish to my salmon one night.
